Right after meeting our host we understood that it was not a holiday. We had to move quickly and do as much as possible… In fact, the first stop was at the OZ Bar (Highly recommended!) for a drink but as everybody can easily understand we ended up the night lets say quite tipsy..!
Despite the hangover, we had to wake up pretty early the day after. Just the time to grab a coffee and an incredible day was about to start. Talking to Iakobos, one of our host, bartender at Oz and Mastiha expert, I suddenly realized that all of Chios population is related with the Mastiha production and also, the most important thing, folks there, took pride of their work, focused on delivering a good job.
A late summer short car ride brought us to the distillery where we met Stelios the Kentos and Enosis master distiller. In a really relaxed and humble way he explained how the magic happens starting from the tears infusion with the sugar cane alcohol to the eight hours distilling process combined with the steam distillation to obtain the precious Mastiha oil.
We finished our distillery tour enjoying the shade of a beautiful tree under a warm October Greek sun with a nice glass of Mastiha.
Anyway, beautiful and relaxing moments don’t last forever and we headed to Pirgi to visit “The Chios Mastic Museum”. If somebody doubts about the craft and history of the Mastiha itself has to visit this place. Full of authenticity a truly open mind experience for a finally understanding of this ancient resin that has been charming people from all the world.
At this point try to guess where and how we finish this beautiful day? At the Oz Bar as the night before and in the same condition of the night before….
